Available in a direct heating version for cooking liquid foods that do not require stirring and in an indirect heating version (gas and electric) for denser dishes, such as creams and sauces. The AISI 316 steel tank, highly resistant to corrosion by salt and sauces, can also be used with the addition of baskets that allow for cooking large quantities of vegetables. Cleaning and maintenance operations are made easier by the rounded edges and the easily removable drain tap: any small spills flow into the hole in the top.

Worktop and front and side panels in 304 stainless steel. Stainless steel interior. Cooking vessel bottom in AISI 316 steel, thickness from 20 to 40/10, ideal for treating acidic products. Interspace with bottom and walls in AISI 304 stainless steel. Indirect heating with low pressure steam (0.5 bar), generated inside the interspace by armoured resistors in incoloy-800 alloy. Hot and cold water refill taps located on the worktop with articulated spout for filling and washing the vessel and the interspace. Mechanical pressure gauge with interspace pressure indicator. Power supply regulated by a 3-position switch. Separate control for temperature regulation. Power indicator light and temperature-reaching indicator light. Motorised tipping on front axle. Load-bearing structure in 30/10 stainless steel.
