Available in the direct heating version for cooking liquid foods that do not require stirring and in the indirect heating version (gas and electric) for denser dishes, such as creams and sauces. The AISI 316 steel tank, highly resistant to corrosion from salt and sauces, can also be used by inserting baskets that allow the cooking of large quantities of vegetables. Cleaning and maintenance operations are facilitated by the rounded edges and the easily removable drain tap: any small spills drain into the hole in the top.

Worktop and front and side panels in 304 stainless steel. Stainless steel interior. Cooking container in AISI 304 stainless steel with a thickness of 15/10, bottom in AISI 316 stainless steel with a thickness of 20/10. Cavity with bottom and walls in AISI 304 stainless steel, bottom thickness 20/10, walls thickness 15/10. Indirect heating with low pressure steam (0.5 bar), generated inside the cavity via armored Incoloy resistors equipped with a safety thermostat. Hot and cold water refill taps located on the work surface with an articulated spout for filling and washing the container and the cavity. 2 inch chromed brass drain tap with athermal handle. Mechanical pressure gauge with cavity pressure indicator. Power delivery regulated by a 3-position switch. Separate control for temperature regulation. Line indicator light and temperature indicator light. Double walled lid.
